Eggplants are zesty! That’s why a lot of you think that eggplants are fatty!
” They are full of oil! you can feel it!”
But that’s absolutely wrong!!
Eggplants are believed to originate from India, also known as aubergines.
It is an extremely  low calorie food, unlike what most of you think! In fact, one medium eggplant contains approximately 55 calories!!  It is a non-fat, zero-cholesterol, zero-sodium food!
Eggplants main health benefit is to decrease cholesterol level in a direct and fast way, and to prevent cancer cells from mutation!
Why is that??
Chlorogenic acid is a plant compound  known for its high antioxidant activity.  Another powerful antioxidant is called Nasunin, found in the skin of eggplants!
 The U.S. Department of Agriculture’s Agricultural Research Service found that chlorogenic is the most dominant antioxidant in eggplant. It had a great capacity  to lower LDL (bad) cholesterol. Chlorogenic acid is also antimutagenic, which means it protects cells from mutating into cancer cells!
Eggplant is also a good source of folic acid and potassium. Eggplant is mainly composed of fiber.
Eating a whole eggplant will provide approximately 60 percent of your body’s daily fiber need.
That means it is a perfect kind of vegetable for people with high blood pressure! And for people with chronic constipation!
Best way of eating eggplants!!!
Cooking eggplants with some cheese or creamy sauces, such as eggplant Parmesan or the famous moussaka batinjane, diminishes the low-calorie benefits of this food.
So the best way is to eat it grilled or cooked in tomato sauce, and served over pasta or salads for example.
Note that eggplants have a spongy texture that soaks up oil very quickly, so avoid frying methods as well! ;)
